This delicious Vegan porridge is absolutely filling and tasty. It can be easily modified to accommodate nutritional needs and preferred tastes. Seasonal fruits can be used to keep it fresh. This recipe makes 1 serving and can easily be modified for a family or large group.
- 1/2 cup rolled oats
- 1 cup unsweetened vanilla almond milk
- Pinch of salt
- Maple syrup
- 1/2 persimmon
- 5 blackberries
Bring 1 cup unsweetened vanilla almond milk and a pinch of salt to a boil. Add 1/2 cup rolled oats and reduced heat to simmer for 5 minutes.
Cut persimmon into bite size pieces. Scoop cooked oats into a bowl and sprinkle lightly with cinnamon and cardamom. Top with persimmon, blackberries, and drizzle with maple syrup to taste.
